Chilled Drink of the Week: Bats in the Belfry

Chilled 100 Ambassador, Brett Esler created “Bats in the Belfry,” a perfectly pink cocktail well suited for a lovely October afternoon and good enough to compete with in the Portland Bacardi Legacy Regional Finals.
Bats in the Belfry
Ingredients:
- 1 1/2 oz. Bacardi Superior Rum
- 1 oz. Fresh Watermelon Juice
- 3/4 oz. Kaffir Lime- Vanilla Bean Syrup
- 1/2 oz. Fresh Lime Juice
- 1/4 oz. Campari
Preparation: Combine ingredients in a coupe glass, garnish with 2 watermelon balls intertwined with a cucumber slice.
