
Spiked Sunshine

Ingredients:
2.0 oz Mango Shotta
.25 oz passion fruit puree
.75 oz Mango Shrub (Cut up whole mango into pieces and place in container. Add half of the weight of the mango in sugar and allow to sit covered at room temperature for 24 hours. Strain off the syrup and add .75 oz of apple vinegar for every 2 oz of syrup)
5 drops 80:20 Saline Solution (20g of salt to 80g of water by weight)
Pickled mango garnish: Take mango used to make syrup, remove skin and cut into desired pieces. Add equal parts vinegar and sugar and allow to soak for 4 hours minimum before use.
Preparation:
Combine all ingredients and add ice into a tin. Throw 5-7 times to chill, dilute, and aerate. Strain into a Tajin rimmed nick and nora glass.

One in the Chamber

Ingredients:
1 oz Mango Shotta
.50 oz Mango Shrub
Mango Shrub (Cut up whole mango into pieces and place in container. Add half of the weight of the mango in sugar and allow to sit covered at room temperature for 24 hours. Strain off the syrup and add .75 oz of apple vinegar for every 2 oz of syrup)
Preparation:
Combine both ingredients into a shaker tin with ice and lightly shake to chill and combine. Strain into shooter glass.
