
A Pop ‘n A Fizz

Ingredients:
1.75 oz Deep Eddy Vodka
.25 oz Falernum
.25 oz lime juice
.5 oz Green Chili Apple Syrup
1 egg white
Top with Salted Lime Foam and serve in glass rimmed with pop rocks
Preparation:
Prepare green chili & apple simple syrup… cut up and simmer green apples in 2 cups water for about an hour, add 1 cup sugar and continue to simmer for 10-20 minutes. Pull from heat and double strain into bowl. Add chopped green chilis… let sit for 30 mins. Strain again into container
When making foam, use one egg white, one half lime and sprinkle sea salt. Blend with hand held emulsifier to get super thick foam
Combine ingredients of cocktail in a shaker with ice. Shake and strain into a coupe rimmed with pop rocks. Add foam. Garnish with dehydrated lime wheel
