Zest

The colored outer peel of citrus fruits such as lemons, limes, oranges, and grapefruits. Zest is finely grated or peeled and used to add aromatic citrus flavors to cocktails. Unlike a twist, zest is often used in smaller quantities and may be incorporated directly into the drink or used as part of the garnish.
