Must Mix: Unicorn Fizz

If you’ve ever found yourself wishing your cocktails were more colorful or your unicorn lattés were just a little more festive, look no further than Gristmill, Brooklyn’s new Unicorn Fizz, a sparkly take on a Ramos Gin Fizz.
The new cocktail came about as a happy accident after Gristmill beverage director Kyle Eberle goofed the recipe for a Ramos Gin Fizz but didn’t want the drink to go to waste. He decided to experiment, adding a touch of pamplemousse liqueur, a smidge of blue curacao and a drizzle of grenadine… and the Unicorn Fizz was born!
Available for $13, the Unicorn Fizz can also be made with fresh orange juice for those who prefer their unicorns dry.
Unicorn Fizz

Ingredients:
For the Shaker:
- 1/4 oz. Pamplemousse Liqueur
- 1/8 oz. Blue Curaçao
- 1/2 oz. Simple Syrup
- 3/4 Lemon Juice
- 3/4 oz. Egg Whites
- 3/4 oz. Heavy Cream
- 2 oz. Dry Gin
For the Garnish:
- Fever Tree Soda Water
- Blue Curaçao
- Grenadine
Preparation: Combine first set of ingredients in a shaker and shake for 20 seconds (dry shake). Add ice and shake hard for an additional 20 seconds. Double strain in collins glass. Pour roughly 3 oz. of Fever Tree soda water over top until foam rises out of the glass. Drizzle blue curaçao and grenadine over foam.
