Our Drink of the Week is Bee Mine, made with The Whistler Irish Whiskey, part of an award-winning range of Irish whiskeys and liqueurs, including The Whistler Irish Honey. This Irish whiskey and honey liqueur is enjoyed around the globe by whiskey enthusiasts and non-whiskey drinkers alike. It features rich aromas of butterscotch, honey, and vanilla, and is crafted from triple-distilled Irish whiskey aged in ex-bourbon barrels and Oloroso casks, blended with all-natural honey produced on the Boann family’s Irish honeybee farm.
The honey used to make The Whistler Irish Honey is harvested locally from beehives in the family’s apple orchards. Without their bees, The Whistler Irish Honey simply wouldn’t exist.

Bee Mine
Ingredients
- 1½ parts The Whistler Irish Honey
- ½ part lavender simple syrup
- 3 parts tonic water (to top)
- Lemon curl, sprig of lavender (optional garnish)
Preparation
- Fill a lowball glass with ice.
- Add ingredients, top with tonic water, and stir gently.
- Garnish with a lemon curl and a sprig of lavender.
