Cocktail by Mariah Lindenthaler

Ingredients:

1 oz watermelon meringue

.5 oz fresh lime juice

1.25 oz fresh watermelon juice

1 oz Demerara syrup (1.5:1)

2 oz Deep Eddy Lime Vodka

Watermelon Juice

Blend 1/2 seedless watermelon; double strain.

Watermelon gelatine

8 teaspoon watermelon juice

2 teaspoon gelatine powder

Evenly sprinkle gelatine over juice, let sit for 5 min. Microwave for 10 seconds or quickly simmer to liquify again.

Preparation:

Watermelon Meringue

2 cups heavy cream

1.5 teaspoon vanilla extract

2 tablespoon instant vanilla pudding

8 teaspoon powdered sugar

With an electric hand mixer, beat together.

Slowly add 1 cup of water melon juice to your whipped cream. I did so in 1/4 cup increments, beating to stiff peaks in between.

Now add your watermelon gelatine, slowly adding to mixture in one steady stream around the circumference of the bowl.

Beat until thick peaks form.

Transfer to piping bag.

crush ice and transfer crushed ice into a mason jar about 3/4 of the way. Add lime wheel to side of glass, in between ice and glass wall. Place your ice cream cone into your glass nuzzling the bottom into the ice; overfill rest of glass with crushed ice. add igredients to shaker, shake and double strain

Garnish:

Watermelon cube, lime wheel, meringue ice cream cone

Mason jar
