Mai Tai

Ingredients

  • 1 oz - Dark Rum
  • 1 oz - White Rum
  • .75 oz - Almond Orgeat*
  • .75 oz - Lime juice
  • .5oz - Dry Curacao
  • Garnish: Mint Sprig and Cherry
  • Glassware: Old Fashioned

Preparation

  1. Add all of the ingredients to a shaker tin without ice.
  2. Add ice and shake for 8 seconds.
  3. Double strain cocktail into glass over fresh ice (preferably crushed.).
  4. Garnish and enjoy.

Almond Orgeat*


Ingredients

  • 250 g blanched almonds
  • 600 ml hot water
  • Amount Varies fine sugar
  • 1tsp orange flower water

Preparation

  1. Soak the almonds in water for 3 hours.
  2. Strain the almonds through a fine mesh strainer.
  3. Add the almonds to a blender and combine with 600ml of hot water, blend until well broken down.
  4. Strain the mixture through a cheesecloth, resulting in an "almond milk."
  5. Place the almond milk, sugar (equal to the volume of resulting almond milk) and orange flower water into a pot. Cook at low heat, stirring constantly, until the sugar is fully incorporated.
  6. Cool at room temperature, then date, label and refridgerate.
