With the colder months already becoming a memory and the hazy heat of summer coming in, I had to figure out what drink I would like to  make and that Edmond Albius would appreciate by encompassing everything that make Edmond’s Honor unique and that this is the kind of drink that you keep going back to, keep taking small drinks because you identify something different in each sip, and when you feel like you’ve almost mapped all the flavors, you find there’s nothing left but sweetness on your lips and you have to do the whole thing all over again, which is all I could ever ask from a cocktail.

Kiss Goodnight

Ingredients

  • 1 ½ oz. Edmond's Honor Bourbon
  • 1 oz. Grand Mariner
  • ¾ oz. The Perfect Puree Cherry Puree, thawed
  • 6 drops King Floyd's Cherry Cacao Bitters
  • ½ oz. Bourbon Vanilla Chai Tea Honey Syrup*
  • ½ oz. Fresh Lemon Juice
  • ½ oz. Fresh Orange Juice

Preparation

  1. Add all ingredients to the cocktail shaker, shake with 3 large ice cubes for 10 seconds.
  2. Double Strain into a cocktail glass and garnish with a luxardo maraschino cherry.

Bourbon Vanilla Chai Tea Honey Syrup*


Ingredients

  • 1 cup Honey
  • 1 cup Boiling Water
  • 1 regular-size Bourbon Vanilla Chai Tea Bag

Preparation

  1. Stir together honey and 1 cup boiling water in a heatproof measuring cup until honey is dissolved.
  2. Add bourbon vanilla chai tea bag, and steep, uncovered, about 10 minutes.
  3. Discard tea bag; pour syrup into a 2-cup jar.

I was inspired by the origin story of the Vanilla Bean Orchid propagation in Réunion, France. I delightfully fell down a rabbit hole of research and found what fruits grow there. I decided to incorporate guava and coconut palm sugar because they are native to the area and would complement the flavors of vanilla essence in the bourbon.

Bourbon Guava-Tini

Ingredients

  • 2 parts Bourbon
  • ½ parts Pink Guava Purée
  • ¼ parts Coconut Palm Sugar Simple Syrup
  • ½ parts Lemon Juice

Preparation

  1. Add everything to a tin with ice and strain into a coupe glass.
  2. Garnish with a lemon twist.

The inspiration behind this cocktail is a strawberry creme Brule dessert I had while out dining. A lot of my inspiration comes from food. I didn’t know how it would come out in a cocktail. I wanted to create something that was as true as possible in flavor and texture. For the creamy custard element, I used real vanilla and heavy cream.

Edmond's Brule

Ingredients

  • 2 oz. Edmond's Honor Bourbon
  • 1 oz. Lemon Juice
  • ¾ oz. Vanilla Syrup
  • ¾ oz. Heavy Cream
  • ½ oz. Simple Man Amaro
  • 3 Whole Strawberries
  • 1 Whole Egg

Preparation

  1. Muddle 3 Strawberries.
  2. Add all ingredients.
  3. Dry shake vigorously for 30-45 seconds.
  4. Add ice, shake again vigorously.
  5. Strain into coupe glass.
  6. Top with powdered sugar, use torch until sugar caramelizes.
  7. Place strawberry on top of caramelized sugar.

As a tribute to the craft of Edmonds Honor Bourbon, my idea was to create a deconstructed Manhattan playing with different textures creating the vermouth caviar with spherification. Also, I wanted to highlight the Madagascar vanilla notes in the bourbon with pecan and coffee beans.

The Gotham Pearl

Ingredients

  • 2 ½ oz. Pecan Fat Washed Bourbon (fat wash the bourbon with pecan cooked in olive oil and let it rest in the fridge for 24 hours and then strain)
  • ¼ oz. Sage Syrup (1:1 ratio of sugar and water, 10 sage leaves)
  • Garnish: Sweet Vermouth-Coffee “Caviar” Spheres*

Preparation

  1. Shake and strain bourbon and sage syrup into a rocks glass.
  2. Garnish with spoonful of sweet vermouth-coffee “caviar” spheres.

Ingredients

  • sweet vermouth
  • coffee beans
  • agar agar

Preparation

  1. Infuse sweet vermouth with coffee beans for 24 hours, then strain it.
  2. Add agar agar to the strain liquid, bring the mixture to a boil stirring constantly to dissolve the agar completely.
  3. To form the spheres, use a syringe to drop the liquid into a chilled oil.
  4. Strain and rinse.
