
Mango , spice , and everything nice!

Ingredients:
1.5oz Mango Shotta
0.5oz St. George spiced pear liqueur
1.0oz lime juice(freshly squeezed)
.75oz Vanilla/Ginger simple syrup*50 brix
.75oz egg whites
Preparation:
Add all ingredients to shaker.
Add ice ( kold draft if availible)
Shake until chilled and diluted.
A good foam should have formed. If not remove ice and do a second dry shake to create a nice foam.
Double strain through fine strainer into chilled coupe.
Garnish with fresh lime rind grated with microplane over cocktail onto foam.
Garnish:
Fresh lime peel grated with microphone.
Glassware:
5to 6 oz Cocktail coupe

Secret Time
Shooter by Ryan Clark
Ingredients:
1.25oz Mango Shotta
0.25oz St. George spiced pear liqueur
0.5oz Vanilla whipped cream.(vanilla simple syrup plus heavy whipping cream charged in an ISI canister.
Preparation:
Shake Mango Shotta and pear liqueur over ice.
Pout into shot glass leaving room for cream.
Top with vanilla cream from ISI
Top with fresh grated lime peel
Garnish:
Fresh lime peel grated with microphone.
Glassware:
2.5oz shot glass or similar.
