Em’s Tonic

Ingredients
- 2 oz. Letherbee Gin
- .75 oz. Cucumber Tarragon Shrub*
- 1 oz. Lemon Juice
- .5 oz. Honey Syrup
- .5 oz. Fever-Tree Mediterranean Tonic Water
- Dehydrated Orange Wheel (to Garnish)
- Cucumber Ribbon (to Garnish)
Preparation
- Place all ingredients, except tonic water and garnishes, in a shaker tin with ice, and shake.
- Pour Fever-Tree Mediterranean Tonic Water in the tin.
- Pour into a Collins glass over ice.
- Garnish with a dehydrated orange wheel and cucumber ribbon, if desired.

*Cucumber Tarragon Shrub
Ingredients
- 2 Cucumbers, Sliced
- 2 Limes, Sliced
- 5 Tarragon Sprigs
- 10 Coriander Seeds
- 1 Water
- 1 quart Sugar
- .5 quart Apple Cider Vinegar
Preparation
- Combine all ingredients in large pot and bring to a boil.
- Once boiling, bring the temperature down and simmer for 30 minutes.
- Let rest and cool, then strain.
