Happy Hour goers can enjoy their choice of house Chardonnay or Cabernet; Burlock Coast’s exclusive brew, the BC Bootlager; Granddaddy’s Liquor Cabinet (well spirits); as well as signature cocktails – Bill’s Spirit made with Conch Republic rum, grapefruit-infused Carpano Antica, Martinique cane sugar and Angostura bitters and Donna the Privateer made with Flor de Caña 4 Year, 100 Proof spiced rum, Don’s mix angostura and grapefruit bitters. Bar bites from chef de cuisine Gavin Pera include Rock Shrimp Fry with passionfruit aioli and lime; Spicy Avocado Tomatillo Dip and house chips; Half Dozen East Coast Oysters; and Cheese of the Day with house-made jam and almonds.

  • 3/4 oz. Celery Syrup
  • 3/4 oz. Lemon Juice
  • 4‐5 oz. Ginger Beer
  • 2 dashes of Celery Bitters

Suggested Spike: 1 1/2 oz. Prescribed Spirits Gin

Preparation: Build in an iced Collins. Stir. Pour and serve in rocks glass. Garnish with Celery and Lemon Peel.

  • 2 oz. Sauza Blue Tequila
  • 1 oz. Grapefruit Juice
  • 1/2 oz. Lime Juice
  • 1 oz. Agave Nectar
  • Mezcal & Single Malt Scotch Misted Glass (Use Atomizer/Spray Bottle)

Preparation: Fill a shaker with ice. Shake well. Strain over fresh rocks into Mezcal-rinsed glass. Garnish with Lime Peel.

Ingredients:

  • 1 1/2 oz. Koloa Dark Rum
  • 1/2 oz. Cointreau
  • 1 oz. JAX Coconut Water
  • 2 dashes Orange Bitters
  • Coconut Water Ice Sphere*
  • 1 Orange Peel

*Coconut Water Ice Sphere

Mash berries and mint leaves and double strain. Add coconut water and mix. Put into an ice sphere mold and add 1 blackberry, 2 blueberries, 2 pieces of strawberry, and mint leaves inside the mold.

Preparation: Add all ingredients to a mixing tin. Stir until cold. Strain over Coconut Water Ice Sphere. Serve in a rocks glass.

  • 2 oz. Housemade Southern Comfort (Mellow Corn Whiskey)
  • 1/2 oz. Pineapple Juice
  • 1/2 oz. Lime Juice

Preparation: Shake and strain over fresh ice. Pour in a collins glass. Float with Pepsi 1893 and garnish with paper umbrella.

  • 1/4 oz. Frangelico
  • 2 oz. Pineapple Juice
  • 1 oz. Passionfruit Syrup

Preparation: Add all ingredients to shaker tin with ice and shake. Strain over pebble ice into a Collins glass. Garnish with 2 pineapple leaves.
