Ingredients

Small batch
For the ginger beet simple syrup
- 1 cup fresh beet juice
- Juice of 1/2 inch fresh ginger
- Zest of 1/2 a lemon
- 1/2 cup sugar
- 1/2 cup water
Large batch
- Beet simple
- 5 lbs beets
- 1 lb ginger
- 2 lemons zest
- 1 celery stick
- 2 qt sugar
- 2 quarts h20
Preparation: Add all above ingredients to saucepan and bring to boil. Remove from heat and let cool. Syrup can be stored refrigerated indefinitely. Fill shaker with ice and add two ounces Peach Ciroc, juice of half a lemon and two ounces of beet ginger simple syrup. Shake vigorously and pour into martini glass rimmed with lemon juice and dipped into sugar. Garnish with a lemon twist.
