Wings of Fire

  • 2 oz. Harleston Green Scotch
  • .75 oz. Burnt Orange Demerara Syrup*
  • .75 oz. House Made Hard Pear Cider**
  • .5 oz. Fresh Lemon Juice
  • 1 Egg White


*Burnt Orange Demerara Syrup

Cut an orange in half and charr on a grill top until you get grill marks. Squeeze juice into brown sugar simple.

**House Made Hard Pear Cider

Combine pear juice, yeast and sugar in a jar. Set aside for 10-13 days, add carbonation, cork and set aside until ready to drink!

Garnish: “Winged” Orange Peel

Cocktail Inspiration:

Coming into fall I am always looking at ways to use those epic flavors. Oranges and pears are two of my favorite and they play so well together —- especially when you throw in some flavor punching scotch! It was a no brained to bring them all together with the freshness of lemon, and froth of a good egg white cocktail.
