The Pink Norman 2.0

- 1 1/2 oz. Wódka Vodka
- 1/2 oz. Lillet
- 1/2 oz. Fresh Grapefruit Juice
- splash of Simple Syrup
- 2 dashes Grapefruit Bitters
- Top with Key Lime Pie Cocktail Foam
Preparation: Key Lime Pie Cocktail Foam: Place half of a lime’s zest in a quart container (after you express the zest into the container) and add 4 ounces of hot water. Let sit for 15 minutes. Take lime zest out and make a simple syrup with the liquid. Once the simple syrup is smooth add 2 ounces of coconut milk, 2 ounces of fresh lime juice and 8 dashes of Angostura Bitters. Refrigerate mixture. Once cold add 4 egg whites and delicately mix for a couple of seconds then place the mixture in a whipped cream dispenser and charge twice. The mixture is ready but I like to refrigerate it for an hour for the consistency of the cocktail foam. Place Wodka Vodka, Lillet, Fresh Grapefruit Juice, Simple Syrup and Grapefruit Bitters in a shaker tin with ice and shake for 15 seconds. Double strain into a Coup glass and top with Key Lime Pie Cocktail Foam. Lastly, wake your mint sprig up with a couple of thumps and enjoy the taste of art!

This cocktail is inspired by two cocktails and knowledge that I’ve gained in my bartending career over the years. The first cocktail is one that I created years ago called a “Key Lime Pie”! More difficult than it sounds this cocktail helped me realize the importance of coconut in recreating the iconic Key Lime taste. The second was also made years ago and it’s called “The Pink Norman”, it too had a lesson in store for me on my cocktail journey! This cocktail taught that less is more sometimes, being a 3 ingredient cocktail (Grapefruit Vodka, Malibu and fresh limes shaken) that would knock my customers socks off! I’m always pushing myself to perfect new cocktail techniques and push the limits of cocktails and even the times that we drink them during our experiences!.. So this is not a dessert cocktail. You can have this Key Lime Pie Cocktail Foam at any moment of your outing on top of this drinkable art and not feel like it’s out of place. Cheers to pushing the limits!
