The Nine Club

Recipe by Jason Miscione


  • 3/4 oz. Celery Syrup*
  • 1/2 oz. Lemon Juice
  • 1 1/2 oz. Harleston Green Scotch

Top Soda Water


  1. Combine 1-3 into cocktail shaker with ice and hard shake for 15 seconds.
  2. Strain into collins glass with ice and top with soda water.

*Celery Syrup

  • 2 cups Granulated Sugar
  • 1 cup Water
  • 2 tbsp. Freshly Ground Celery Seed

Place the sugar and the water into a medium saucepan over medium-high heat. Stir to combine. Continue to stir frequently until all of the sugar has dissolved. Remove from the heat and add the celery seed, cover and allow to steep for 1 hour. Strain though a fine mesh strainer into a heat-proof container and place in the refrigerator, uncovered until completely cool.

Garnish: Dehydrated Lemon Wheel

Cocktail Inspiration:

This cocktail is a spin on a collins but using celery syrup to add another layer and savory notes to this drink.

I wanted to bring back a forgotten American Soda flavor and reintroduce it in an elevated way.
