Green with envy

- 2 oz. Harleston Green Scotch
- 3/4 oz. Orange Zest Infused Pineau des Charantes*
- 1/2 oz. Amaro Montenegro
- 6 dash Angostura
- 4 muddled slices of Honey Crisp Apple
Preparation: In a mixing glass add apples slices and bitters and muddles to release apple juice. Add remaining ingredients and ice and stir. Taste to make sure both the cocktail is diluted and chilled.

I wanted to create a stirred spirit forward cocktail that is both flavor full and balanced. Using flavors that aren’t traditionally seen to enhance the flavors of the scotch, and both be soft on the palate. I wanted to balance the peaty aromatics of the Harleston Green Scotch with the Amaro and pineau Des charentes. I wanted to create a cocktail that could join the classics like The Manhattan and Monte Carlo. Cheers.
*Orange Zest Infused Pineau des Charantes
Zest 4 oranges and add to a bottle of Pineau Des Charentes poured into a Cambro. Rest in fridge for 24hrs. Then strain the zest and discard. Store in fridge till ready to use.
