- 1.5 oz. Harleston Green Scotch
- .25 oz. Campari
- .25 oz. Carpano Antica
- .5 oz. Pear Cordial*
- 2 dashes Saline Solution
Preparation: Combine all ingredients in shaker tin and shake vigorously. Strain into coup glass. Cocktail is served up. Garnish with seasonal wild flower attached to stem of glass with twine.
Combine sliced pears, water and granulated sugar at a 2:2:1 ratio to simmer at low for 25 minutes. Add a pinch of ginger and 5 cinnamon sticks as it simmers. After 25 minutes, let cool and double strain into a bottle to refrigerate.

Cecil’s Way is inspired by my late grandfather, Cecil Estep. When I was a child he would take me on walks around his property in the country and we’d often go to his pear tree and he’d let me pick pears…which made me feel pretty big as a little guy! It’s a very special memory for me and one I think of often. I’m honored to present this cocktail to you all and I think he would be proud.
