Beet Boxer

Recipe by Scott Fraser

Ingredients:

  • 1.5 oz. Harleston Green Scotch
  • 0.75 oz. Fresh Lemon Juice
  • 0.75 oz. Luxardo Apricot
  • 0.5 oz. Agave
  • 4 Pickled Baby Beets
  • Founders Rubaeus Float

Preparation: Shake all ingredients and fine strain over a big cube.

Garnish: Lemon Peel

Glassware: Bucket

Cocktail Inspiration:

It’s no secret amongst my clientele and staff that I love Dad Jokes and Puns, much to the chaigrin of those around me. But I love the punch beets add to shaken cocktails, and I found a one-two punch in the this combination that made music to my ears. So of course I had to name it the Beet Boxer.
