A Clever Russe

- 1.5 oz. Wódka Vodka
- .5 oz. Aquavit
- .75 oz. Ginger Syrup
- 1 oz. Unsweetened Cranberry Juice
- .25 oz. Beetroot Juice
- 1 oz. Club Soda
Preparation: Pour all ingredients except the club soda into a cocktail shaker with cubed or cracked ice. Shake vigorously until shaker frosts over and cocktail is completely chilled. Strain into a collins or highball glass, over fresh ice, and pour club soda on top. Garnish with fresh fennel, fennel blossom, and candied ginger.

My in-laws are former soviet union transplants that have adapted their classic, old-country recipes to New Jersey. To celebrate the dog days of summer, they often make a “cold borscht” with chilled cranberries, plenty of crunchy radishes, and a wonderfully crisp and chilled, bright-red beet broth. This cocktail is “cold borscht” in a glass. It’s a great, lower-ABV cocktail that is bright, spicy, slightly tart, and effervescent.
