Metate Margarita

“For those with a more expert drinking making background, this drink is truly an excellent test for your skills, but the end result is a completely unique Margarita that will set the standard for quality Margaritas. The recipe is inspired by the metate, which is a stone used to grind grains and spices in Mexico. It is used to make everything from tortillas to mole. The meate rapid infusion was made using spices commonly used to make mole nero that results in a savor, spicy and authentically Mexican Margarita.”

Ingredients:

  • 1 1/2 ounce Metate* infused Tequila Don Julio Blanco
  • 1/2 ounce Fresh Lime Juice
  • 1/2 ounce Agave Syrup

Infusion Recipe and Preparation:

*Metate Infusion Recipe (makes 4 1/2 servings)

  • 7 ounces Tequila Don Julio Blanco
  • 6 g Dry Roasted Unsalted Peanuts
  • 6 g Toasted Sesame Seeds
  • 2 g Ancho Chile (seeds removed)
  • 3 g Chipotle (seeds removed)
  • 6 g Valrhona Cacao Nibs

Preparation:

  1. Add infused Tequila Don Julio into a iSi Whipper (commonly used to make whipped cream and easily found in a kitchen supply store).
  2. Charge the iSi Whipper twice with N2O and let stand for 5 minutes.
  3. Vent the iSi Whipper upright to release the gas.
  4. Open the iSi Whipper and pour any liquid that was expelled back in.
  5. Allow all the N2O to vent for 5 additional minutes.
  6. Strain contents through a fine mesh strainer or if there additional small particles, strain through a paper coffee filter.

Preparation once Metate infusion is complete:

  1. Combine infused Tequila Don Julio Blanco, fresh lime juice and agave syrup into a cocktail shaker with ice. Shake well.
  2. Strain into a rocks glass (salted rim optional).

Ideal Serving Glass: Rocks glass

Yield: 1 drink, no drink contains more than 0.6 fluid ounces of alcohol

Tuna* Cooler (Spanish for Prickly Pear)

“This drink is inspired by a soda commonly found in southern California called “Cactus Cooler,” and is a twist on a traditional Margarita with the addition of prickly pear purée to the recipe. This drink is, easy to make yet, unique and delicious, making it the perfect recipe for the novice at-home mixologist looking to celebrate the holiday.”

Ingredients:

  • 1 1/2 ounces Tequila Don Julio Blanco
  • 1/2 ounce Fresh Lime Juice
  • 1/4 ounce Prickly Pear Purée
  • 1/4 ounce Agave Syrup

Preparation:

Combine Tequila Don Julio Blanco, fresh lime juice, prickly pear purée and agave syrup into a cocktail shaker with ice. Shake well and strain into a coupe glass (salted rim optional).

Glassware: Coupe glass

Yield: 1 drink, no drink contains more than 0.6 fluid ounces of alcohol

 Tequila Don Julio® Luxury Margarita

Ingredients:

  • 1.5 oz. Don Julio Blanco
  • .75 oz. Agave Nectar
  • .75 oz. Fresh Lime Juice

Garnish: Fresh Lime Wedge

Preparation:

Build ingredients into a Boston Shaker, then add ice and shake vigorously. Strain over ice in a rocks glass and garnish with a lime wedge.

Glassware: Rocks Glass

Heat

Ingredients:

  • 1.25 oz. Don Julio Anejo
  • .25 oz. Grand Marnier
  • .5 oz. Fresh Squeezed Lime Juice
  • .25 oz. Simple Syrup
  • .25 tsp. of Chipotle Chili Powder

Preparation:

Build ingredients into a Boston Shaker, then add ice and shake vigorously. Line with a salt/sugar rim and strain over ice in a rocks glass.
