Must Mix Tiki Cocktails Sans Rum

At Sable Kitchen & Bar (a 2015 Spirited Awards finalist for “Best American Hotel Bar”) their summer cocktail menu has a few cool things going on including tiki-style cocktails sans rum – spiced bourbon pina coladas, chai tea tiki cocktail with chardonnay and base spirits like Spanish vermouth and chardonnay. They also feature savory Spanish Cider cocktails mixed with Cachaca and red pepper syrup and a Pisco Sour riff made with pichu berries (a cross between tomatillos and citrus) and garnished with smoked paprika. Their summer Sherry Swizzles are made with Amontillado Sherry, which mimics the flavor profile of rum with notes of toasted nut, caramel and raisin and Banana Mix Syrup (Blackstrap Rum, Bicardi 8 Rum, Banana Liqueur & honey). You Butter Bet Your Life (Cold riff on a hot buttered rum)

South Water Kitchen (Chicago), bartender Eric McMillian-Yates

Ingredients:

  • 1 oz. Rhum Clement
  • 1/2 oz. Blackstrap Rum
  • 1/2 oz. Orange Curacao
  • 1 oz. House-made Cardamom-Butter Syrup
  • 1 1/2 oz. Mango Nectar

Preparation: Shake and strain, then garnish with freshly grated nutmeg.

Chai-Alai (A tiki-style chai tea riff with tequila)

Ingredients:

  • 1 1/2 oz. Reposado Tequila
  • 3/4 oz. Chardonnay
  • 3/4 oz. Earl Grey Syrup
  • 3/4 oz. Fresh Lemon Juice
  • 1/2 oz. Amaro di Angostura

Preparation: Short shake, pilsner, crushed ice. Top with cream. Garnish with grated cinnamon.

Ingredients:

  • 1 oz. East Indian sherry
  • 1 oz. Amontillado sherry
  • 1 1/4 oz. Blackstrap Banana Mix
  • 3/4 oz. Pineapple Syrup
  • 3/4 oz. Lime Juice
  • 3 dashes Angostura

Preparation: Swizzle, crushed ice, pilsner. Garnish: Mint sprig, ango bitters

Ingredients:

  • 1 1/2 oz. Cachaca
  • 3/4 oz. Roasted Red Pepper Syrup
  • 1/2 oz. Fresh Lime Juice
  • 2 dashes Scrappy’s Celery Bitters
  • Riestra Cider, to fill

Preparation: Short shake, up, Georgian, top with Riestra.
