Against All Odds
- 1 1/2 oz. Bayou Spiced Rum
- 1 1/2 oz. Pineapple Juice
- 3/4 oz. Yellow Chartreuse
- 3/4 oz. Lemon Juice
- 1/2 oz. Cane Syrup (1:1)
- 2 dashes of Orange Bitters
- Top Off with Club Soda
Preparation: Add all ingredients to a tin, shake and fine strain over rocks.
Garnish with a gator tail (watermelon rind cut with scissors) and star anise.
Meet Mario Salas

Mario’s alma mater is Saxon + Parole in New York City, where he and his team took home ‘Best New Restaurant Bar in the World’ in 2013 at Tales of the Cocktail. Prior to that, he was working out west helping to open bars in Portland, Oregon. But it was behind the stick at Manhattan’s Locanda Verde in TriBeCa, circa 2009, where Mario learned the ropes.
When I moved to New York at the age of 21, I never intended to make a career in hospitality, but while working in bars to make ends meet, my profession slowly revealed itself. My mentor, Naren Young, took me under his wing at Locanda and showed me the history behind the classics and why we, as a society, imbibed with purpose. I love the history of cocktails – it has become my own personal time machine to the past – and it inspires me to think outside the box when I’m given an opportunity to create something new.
My inspiration for ‘Against All Odds’ comes from the spirit of those first American revolutionaries over 200 years ago. It was their resilience that freed our country from tyranny, and paved the way for future generations till the end of time. Bayou rum has taken the Caribbean’s favorite spirit and is doing something special – creating it right in our own backyard. I’m honored to share my palate for sugar cane spirits filled with rich, dark textures and spices.
