Chilled Drink of the Week: Fig & Olive Cocktail

The uses for olive oil are seemingly endless: in baked goods, salads, even as an ice cream topper. But have you ever had olive oil in a cocktail?
At FIG & OLIVE Meatpacking, where heart healthy olive oil is the star, their signature cocktail is made with a vibrant blood orange infused olive oil.
Seasonally appropriate for winter, the citrus-based cocktail is sweet but not cloyingly so, thanks to the addition of organic cucumber vodka and celery, and frothy egg whites add a bit of texture. The yellow, pink, and orange hues are a welcome burst of color during the drearier cold months.
Fig & Olive Cocktail

Ingredients:
- 3 pieces of Celery – 1″ Long Each
- 1/2 oz. Blood Orange Olive Oil
- 1/2 oz. Simple Syrup
- 3/4 oz. Lime Juice
- 1 oz. Blood Orange Purée
- 1/2 oz. Egg White
- 2 oz. Cucumber Vodka
- 1 Celery Sprig
Preparation: Place three pieces of celery in shaker o Muddle celery. Add 1/2 oz. of blood orange olive oil. Add 1/2 oz. of simple syrup. Add 3/4 oz. of lime juice. Add 1 oz. of blood orange purée o Add 1/2 oz. of egg white. Add 2 oz. of cucumber vodka. Add ice and shake. Strain over fresh ice in Collins Glass. Garnish with celery sprig.
