Rare Wines Made Accessible in Chicago

Rare wines and accessibility rarely go hand in hand. A new program at David Burke’s Primehouse in Chicago is changing that by utilizing the coravin, a new wine technology that allows users to access wine without pulling the cork.

Primehouse sommelier, Matthew Bills, has designed the new Cellar Glass Pour Program featuring 3oz. and 6oz. pours of the rarest vintage wines in the notable steakhouse’s wine cellar.

With the new wine Cellar Glass Pour Program, experiential drinkers now have access to new types of wine flavors they haven’t before. The new technology of the coravin allows the sommeliers to extract a single glass of wine from a bottle without popping the cork and affecting the remaining contents. As all of the wines included in the program are made up of the oldest and best vintage wines, the Cellar Glass Program is a true indulgence for both experienced wine lovers and new aficionados. Program include:

• 1975 Chateau Cantemerle

A true gem, the 1975 Chateau Cantemerle is one of the finest fifth growth Bordeaux’s. It pairs seamlessly with any one of Primehouse’s award-winning dry-aged steaks, which brings out its notes of baked red fruits, mushrooms and dried violets. Well-balanced with a nice acidity, the wine is offered for $35 for a 3oz. pour or $70 for a 6oz. pour.

• 1988 Chateau d’Yquem

The only premier grand cru, Sauternes of France, the 1988 Chateau d’Yquem makes the ideal pairing with Primehouse’s foie gras or duck egg crème brûlée dessert. The 1988 vintage offers flavor profiles of honey comb, dried pineapple, white flowers and ginger. This wine is specially offered by the single ounce, for just $65.

• 1997 Fisher Coach Insignia

One of the best vintage red wines from Napa Valley, the 1997 Fisher features a flavor profile of dark cherry, blackberries, chocolate and cinnamon with herbal notes on the finish. It’s a perfect match for appetizers including Primehouse’s bacon sticks and wagyu beef sashimi. The Fisher is offered for $30 for a 3oz. pour or $60 for a 6oz.
