Super Cocktails – Pomegranate Power

Pomegranate is nothing new in the cocktail world as grenadine is syrup based on the fruit.  Although grenadine has probably become more of an artificially flavored sweetener these days, the time for fresh pomegranate juice has begun a new.  This fruit has gained a reputation as a “super food” with lots and lots of health benefits.  The juice is loaded with antioxidants, and actually has three times more antioxidants than the amount found in green tea and red wine.  It is also a great source of vitamin C and has been found to have the potential to fight viruses and cancerous tumor activity.  Give this delicious martini a mix and use fresh juice to taste the power of the pomegranate.

Pomegranate Martini Recipe

Ingredients

  • 1 1/4 Cup fresh pomegranate juice
  • 2 oz. Absolute Citron Vodka
  • 1 oz. Cointreau
  • Splash of sparkling water
  • Squeeze of lemon
  • Pomegranate seeds, for garnishing

Preparation

Fill a cocktail shaker halfway with ice.  Add ingredients, shake, and strain into martini glass.  Garnish with pomegranate seeds.

Two methods for making Fresh Pomegranate Juice:

  1. To prepare, slice off the top half-inch and cut the fruit into wedges.  Hold the pom over a bowl of water, and remove the seeds.  The inedible white membrane will float to the top while the edible seeds will sink to the bottom.  To make juice, user juicer or press, and if necessary strain juice through a mesh strainer.  Each Pomegranate should yield about 4 ounces (1/2 cup) of juice.
  2. Roll the pomegranate around on a cutting board, pressing down with the heel of your hand to crush the internal cells.  Roll the pom around until the fruit starts to feel mushy then hold the pomegranate over a bowl and pierce it gently in one spot with a knife, releasing the juice into the bowl – watch out for the squirt!  Squeeze to release more juice and place a colander over the bowl, scoop out the seeds into it, pressing gently with a wooden spoon to eek out a bit more juice.  Should yield about 1/4 to 1/3 cup of juice.
